For the Fish
2 Fresh Cod Fillets (Buy them here) Can’t find cod? Try Haddock fillets instead (Buy them here)
1 tbsp melted, unsalted butter
1 tbsp taco seasoning (I used Old El Paso)
For the Crema
2 tbsp Light Crème Fraîche
Juice of 1 Lime
1 tsp Honey
Pinch of Salt
1/2 Avocado, sliced
Coriander to garnish
To Serve: Salad, Corn and optional mini taco wraps
The Method
Step 1 – The Fish:
Preheat the oven to 180 degrees Celsius
Line a sheet pan with foil for easier clean up!
Mix together the melted butter and taco seasoning. Brush this mixture onto the fillets quickly.
Bake for 18-20 minutes.
Step 2 – The Honey Lime Crema:
Whisk together the crème fraîche, lime juice, honey and pinch of salt. Add fresh ground pepper to taste.
Step 3 – To Serve:
Serve the baked fish on a bed of salad, arrange the sliced avocado and corn on the plate. Add the mini taco wraps, if using.
Drizzle with the honey lime Crema and sprinkle with Coriander.
