Delicious Wrapped Monkfish by Sky

Wrapped Monkfish Recipe with Prosciutto
For a simple but delicious dinner, choose this beautiful wrapped monkfish recipe. The juicy, meaty fish fillets are complimented by the salty prosciutto ham and tied together perfectly with a creamy and delicious sauce - enjoy!

Ingredients for this Wrapped Monkfish Recipe:

Large Monkfish Fillet (Buy Them Here)
Prosciutto ham
White Onion
2 Cloves Garlic
200ml Double cream
300ml water
Veggie/ Fish stock
Spinach
Prawns (I buy cooked frozen ones from Glasgows Fish Plaice – you can buy them here)

The Method

Step 1 – The Monkfish:
Season monkfish with salt and pepper. Wrap with prosciutto and place on baking paper lined tray. Bake at 200c (I use the fan setting, 220c for non assisted ovens) for 30 mins (cooking time will depend on how big your fish is!!).

Step 2 – The Sauce:

Make the sauce by sautéing finely diced onion and garlic on a low heat. Then add water and double cream and veggie or fish stock if you have. Add the spinach until wilted. Simmer + add more water or cream to your preference.

Step 3 – The Finale:

When the monkfish is almost done add the prawns to to the broth, stir and serve the monkfish in the broth with crusty bread.
