Fresh Squid (approx 500g per person) (Buy it here)
Oil for deep frying
Plain Flour (enough to evenly coat all pieces)
Cumin (1-2 tsps)
Smoked Paprika (1-2 tsps)
Salt and Pepper (to taste)
1 lemon, quartered (to serve)
The Method
Step 1 –
Prepare the squid by slicing into evenly sized rings. Heat a deep fat fryer or deep-sided saucepan of oil to 180˚C.
Step 2 –
Mix together the flour, cumin, salt, pepper and smoked paprika and then toss the squid pieces in the mixture until evenly coated, shaking off any excess.
Step 3 –
Fry the squid in batches so as not to overload the pan. Lift the squid out when the coating starts to turn golden and crispy.
Step 4 –
Serve piled on a warm plate along with the wedges of lemon to garnish. Add a side of olives and a glass of wine and you have an indulgent supper or a tasty starter to a wonderful night of food!
