Live whelks (or winkles) need to be washed in cold water then soaked in salted water for 30 minutes before boiling. If boiled in plenty of water, they take 3-4 minutes to cook. When cooked, roll them in a little oil to make the shell glossy and season with vinegar and salt. It can be time-consuming to remove whelks from their shells, but worth the effort.
