200g fillet of Monkfish per person (Buy it here)
1x pack of Parma Ham (approx 4-6 slices)
8-10 Asparagus Spears
1x pack Baby Sweetcorn
1-2 packs Tomatoes on the Vine
200g Fresh Scallops (Optional) (Buy them here)
1tbsp Sweet Chilli Sauce (Optional)
Prepare and season the asparagus spears, baby sweetcorn and vine tomatoes and add to a large roasting dish.
Prepare the monkfish fillets by seasoning lightly and then wrapping each fillet in the parma ham slices. Carefully pan fry the monkfish and parma ham for a few minutes to seal in the juices, then add to the dish with the vegetables.
Place the dish of fish and vegetables in a pre-heated oven at approx 180oC and cook for approx 20-25 mins (until fish is firm).
Arrange the fish and veg on plates and serve with a wee side of pan fried scallops with sweet chilli sauce! Delicious!
