1 whole crab per person
2-3 spring onions, chopped
5-7 garlic cloves, minced
Small knob of ginger, grated
1 fresh chili, finely chopped
3 eggs, beaten
Soy sauce, to taste
Chinese cooking wine, to taste
Oyster sauce, to taste
Chilli oil or sesame oil, for seasoning
Day-old rice (preferably chilled)

Instructions:

  1. Prepare the Crab:
    • Start by steaming your crab for 12-15 minutes, depending on its size. Once cooked, immerse it in an ice bath to stop the cooking process and cool it down enough to handle.
    • After cooling, break down the crab and pick both the white and dark meat. Set the white meat aside for later use.
  2. Prepare the Egg Mixture:
    • In a small bowl, mix the dark crab meat with the beaten eggs. This will help infuse the rice with more crab flavor as the eggs cook.
    • Heat a wok or large frying pan and fry the egg mixture with the dark crab meat. Once cooked, set it aside.
  3. Cook the Aromatics:
    • In the same wok or frying pan, add some oil and fry the garlic, ginger, spring onions, and chili until fragrant. This will release the aromatic flavors that will form the base of your fried rice.
  4. Combine Crab Meat and Cooking Wine:
    • Add most of the white crab meat to the pan with the aromatics and fry briefly. Deglaze the pan with a splash of Chinese cooking wine, letting it infuse into the crab and spices.
  5. Fry the Rice:
    • Add the day-old rice to the pan, breaking up any clumps. Stir to combine with the crab and aromatics, ensuring the rice soaks up all the flavors.
    • Add the fried egg mixture back into the pan, stirring gently to combine all the ingredients.
  6. Season the Crab Fried Rice:
    • Season with soy sauce, oyster sauce, and a drizzle of chili oil or sesame oil. Adjust the seasoning to taste.
  7. Garnish and Serve:
    • For a finishing touch, top your crab fried rice with a little leftover white crab meat. Garnish with a drizzle of chili oil and a sprinkle of fresh coriander for added freshness and flavor.
