For the Fish
2 Whole Sea Bass (Buy them here) Can’t find Sea Bass? Try Sea Bream instead (Buy them here)
4 tbsp unsalted butter
Generous seasoning (rock salt)
For the Vinaigrette
Juice and zest of 1 lemon.
Handful of capers
Plenty of Olive Oil
Pinch of Salt
Salt and Pepper


The Method
Put the bass on the try stuffed with sliced shallots garlic chopped parsley and slice lemon 🍋. Rock salt and butter over the fish and put tomatoes around the fish on the tray and put it in the oven uncovered at 180 for 25 mins til the skin crisps up. For the vinegarette; 2 cloves of garlic, 1 lemon juice and zest, handful of capers, plenty olive oil 🫒, salt and pepper. All whizzed up in the blender 👌
